Ingredients
- 2 ripe Avocados
- 2 large Eggs (or a firm tofu crumble for a vegan option)
- ½ cup NutraBloom Vitafuel Mixed Nuts (roughly chopped)
- 1 tbsp Lemon juice
- 1 tsp Coconut oil
- A pinch of Sea salt and Chilli flakes
- Garnish: Fresh onion leaves
Directions
- The Prep: Preheat your oven to 200°C. Cut the avocados in half and remove the pit. Use a spoon to slightly enlarge the center hole if needed to fit more filling.
- The Infusion: Brush the exposed flesh of the avocados with lemon juice and a tiny bit of coconut oil. This prevents browning and adds a zesty brightness.
- The Scramble: In a small pan, lightly scramble your eggs (or tofu) with a pinch of salt until they are almost cooked through but still moist.
