Ingredients:
- ½ cup NutraBloom Premium Cashews
- 2 cups Mixed vegetables (Carrots, cabbage, cucumber)
- 2 cups Gotukola or Baby Spinach
- 50g Feta cheese or Vegan cashew cheese (optional)
- Dressing: 1 tbsp Lime juice, 1 tbsp Extra virgin olive oil, a pinch of sea salt, and cracked black pepper.
Directions:
- Roast the Veggies: Preheat your oven to 200°C. Toss your vegetable medley in a little olive oil and roast for 15 – 20 minutes until tender and slightly charred.
