Warm Banana Cake with Toasted Nut Crumble

Nothing says “I care for you” quite like the aroma of a banana cake baking in the oven. Our version is a “Mindful Classic” – taking the nostalgia of a traditional home-baked cake and elevating it with nutrient-dense toppings. It’s about nourishing the child within us while respecting the health needs of the adult we are today.

The star of this cake is the signature “Crumble,” crafted from our NutraBloom Nuts & Seeds Mix and NutraBloom Walnuts. Instead of a traditional sugary flour topping, we use a blend of toasted walnuts and seeds. This adds a sophisticated “crunch” and a boost of brain-healthy Omega-3s, turning a simple slice of cake into a powerhouse of nutrition.

The Recipe

  • Baking time: 40–45 minutes

Ingredients:

  • 3 overripe bananas (mashed)
  • ½ cup Coconut sugar or Jaggery
  • 1 ½ cups Wholewheat flour (or oat flour)
  • 1/3 cup Melted butter
  • The Crumble: ½ cup NutraBloom Walnuts (crushed) + ¼ cup NutraBloom Nuts & Seeds Mix

Directions:

  1. The Base: In a large bowl, combine the mashed bananas, sugar, and butter. Gently fold in the flour until just combined – keeping the batter light is key to a soft cake.
  2. The Pour: Transfer the batter into a greased loaf tin or baking dish.
  3. The Toasted Crumble: In a small bowl, toss the NutraBloom Walnuts and Nuts & Seeds Mix with a tiny drizzle of honey or oil. Spread this mixture generously over the top of the cake batter.
  4. The Bake: Bake at 175°C for 40 – 45 minutes. Watch as the nuts on top toast to a beautiful golden brown while the cake rises beneath them.
  5. The Serve: Best enjoyed while still warm. For the ultimate NutraBloom experience, serve with a smear of almond or cashew butter.
