Almond & Oat BerryBoost Tea-Time Cookies
Rustic, crunchy, and perfect for tea-time.
A cup of pure Ceylon tea deserves a companion that respects its heritage. These rustic cookies are reimagined for the modern wellness journey – crunchy, golden, and packed with textures that tell the story of the earth. Every bite is a mindful reminder to slow down, breathe, and enjoy the present moment with a treat that loves you back.
The secret to the satisfying, hearty “snap” of these cookies is the blend of NutraBloom Almond Powder and Rolled Oats. This combination offers a rich, nutty depth and a superior crunch that refined flour simply cannot match.
In this special version, we fold in the NutraBloom BerryBoost Mix. By combining the tartness of Blueberries and Cranberries with the sweetness of Raisins and dried Apricots, we’ve created a nutritional powerhouse. Together with hand-selected Almonds, it is a “whole-food” treat that delivers long-lasting energy without the sugar crash.
The Recipe
- Prep time: 15 minutes
- Baking time: 12–15 minutes
- Yields: 10–12 Cookies
Ingredients:
- 1 cup Rolled Oats (lightly pulsed in a blender for a rustic texture)
- 1/2 cup NutraBloom Almond Powder
- 1/2 cup NutraBloom Almonds (roughly chopped)
- 1/2 cup NutraBloom BerryBoost Mix (Dried Cranberries, Raisins, Blueberries, and Apricots)
- 1/4 cup melted butter
- 2 tbsp Kithul treacle
- A pinch of Ceylon Cinnamon Powder
Directions:
- The Prep: Pre-heat your oven to 170°C. Line a baking tray with parchment paper.
- The Dough: In a large bowl, combine the pulsed oats, NutraBloom Almond Powder, and chopped almonds. Stir in the NutraBloom BerryBoost Mix, ensuring the colorful berries are evenly distributed. Add the melted butter and honey. Mix thoroughly until it forms a stiff, textured dough.
- The Shape: Scoop a tablespoon of dough and press it into a flat disc on the tray. (These cookies don’t spread much, so shape them exactly how you want them to look).
- The Bake: Bake for 12 – 15 minutes until the edges turn a beautiful golden brown and the fruits look slightly caramelized.
- The Cooling Ritual: Transfer the cookies to a wire rack. Let them cool completely; this allows the butter and oats to bond, creating that irresistible, hearty snap.
