Almond & Banana Wellness Muffins

A soft, fiber-rich treat to brighten your afternoon tea.

Life moves fast, but your snack shouldn’t be a compromise. We created these muffins to prove that “comfort food” can be deeply nourishing. The natural sweetness of ripe bananas, paired with the creamy, earthy richness of almonds, creates a harmony of flavors that calms the mind and satisfies the palate. It’s about taking five minutes for yourself – a warm muffin in hand – and breathing in the aroma of wholesome, intentional baking.

This recipe features NutraBloom Almonds, celebrated for their superior quality and rich nutrient profile. By using them both finely ground within the batter and roughly chopped as a topping, you receive a double dose of Vitamin E, healthy fats, and minerals. Unlike ordinary store-bought muffins, these are anchored by the “whole-food” power of the nut, ensuring you stay satisfied and energized.

The Recipe

  • Prep time: 15 minutes
  • Cooking time: 20 minutes
  • Difficulty: Easy
  • Yields: 6 – 8 Muffins

Ingredients:

  • ½ cup NutraBloom Almonds (divided: half finely crushed, half roughly chopped)
  • 2 ripe Bananas (mashed until smooth)
  • 1 ½ cups Oat flour
  • ¼ cup Honey or Jaggery syrup
  • 1 tsp Baking powder
  • ¼ cup melted butter
  • A pinch of sea salt

Directions:

  1. Preheat & Prep: Heat your oven to 180°C and line a muffin tray with parchment liners.
  2. The Wet Mix: In a large bowl, whisk together the mashed bananas, melted butter, and honey until the mixture is smooth and fragrant.
  3. The Dry Mix: Gently fold in the oat flour, baking powder, salt, and the finely crushed portion of your NutraBloom Almonds. Stir until just combined – be careful not to over-mix!
  4. The Fill: Evenly scoop the thick batter into your prepared muffin tins.
  5. The Signature Topping: Sprinkle the remaining roughly chopped NutraBloom Almonds on top. As they bake, they will toast to a beautiful golden brown, providing a luxurious crunch.
  6. The Bake: Roast for 18 – 20 minutes until the tops are firm and a toothpick comes out clean.
  7. The Rest: Allow them to cool before peeling – this allows the fibers to set, ensuring a perfectly moist texture. The wait is worth it!
